We had this delicious french toast for breakfast last weekend. We usually eat fast and easy things during the week, so this was a fun way to have a fancier breakfast on a day when we had a little extra time.

French toast is a pretty simple, straightforward yummy breakfast. I used homemade whole wheat bread (I'll post a recipe for this soon- we love it!) but you could use any bread that you have. This bread is a little heartier than store-bought sandwich bread, which I liked.

Ingredients for the toast:
4 slices bread
2 eggs
1/2 cup milk
1/2 teaspoon vanilla
butter

1. Heat a skillet on medium heat. Add a little butter and spread in the pan.
2. Whisk the eggs, vanilla and milk together and pour into in a flat bowl. (A pie plate will work for this if you don't have any shallow bowls.)
3. Dip the bread into the mixture, making sure to coat on both sides.
4. Fry in the skillet until browned on both sides.

Ingredients for the toppings:
1 cup mixed berries (we used equal amounts of blueberries, chopped cherries and sliced strawberries)
Optional (to your taste): chopped nuts, maple syrup, powdered sugar, whipped cream, etc.- anything that sounds good to you!

The joy of this is that it is so changeable that you could make this for a crowd and put out a variety of toppings, and everyone can make a personalized breakfast. Yum!
