So, last week I bought a package of small tortillas to make enchiladas with. I'm not a huge enchilada fan, but Lindi is, so I thought I would give it another try. Well... these particular tortillas (from Aldi, and a brand we hadn't tried before) we so thick that we couldn't see a way to actually roll them into enchilada shapes without breaking them. And so... we made breakfast pizza. For dinner. Tortilla breakfast pizza. Like a flat breakfast burrito. And it was delicious.
We got some farm eggs recently (given to us by our lovely friends Darby and Stephen, who although are not actually farmers themselves, have access to fresh farm eggs) and we thought we would use these to make the pizzas. I try not to use farm eggs in baking when we have a limited number, because they always have such distinctive flavors, and I'd much rather eat them where I can actually taste them instead of the flavor getting lost in a cake or batch of cookies.
They are also super easy to make. Here's how:
Ingredients (enough for two people)
2 thick, small flour tortillas (the thicker the better!)
1/2 lb ground turkey sausage
4 small to medium eggs (or 3 large eggs)
1/2 cup diced fresh tomato
2 cups fresh baby spinach, chopped
1+ cups cheese (we used fiesta blend, but you could use anything that strikes your fancy)
salt, pepper and seasonings to taste
a little bit of butter
toppings (sour cream, salsa, guacamole, pico, etc.)
First, heat a skillet to medium heat. Butter your tortillas lightly on both sides, and fry each one for a few minutes on each side until it is nice and golden and a little bit crispy. Remove and set aside on a lightly greased baking sheet.
Saute the meat until cooked well; drain and remove to a bowl or plate. Saute the vegetables until lighttly cooked. Last, scramble the eggs, and mix in the sausage and vegetables. Season to taste. (Be careful with the salt, though, because the sausage and the cheese you're about to add are both pretty salty.)
On the baking sheet, split the egg-sausage-veggie mixture between the two tortillas, and top with cheese. Bake in the oven until the cheese is melted.
Top with whatever you want- we used sour cream and black bean salsa. It was fantastic. Enjoy!
