I must admit, I wasn't sold on the idea of goat cheese for a very long time. I tried it several different ways and never liked it too much. The flavor was just too strong. However, I was convinced to try it one more time- this time with a much milder version.
Yum! It even won me over.
We ate it spread on fresh french bread and topped with candied walnuts, dried cranberries and a drizzle of raw honey, plus a nice big salad of mixed greens on the side for a good summer meal. You could also use other dried fruit with this, like cherries or blueberries.
Candied walnuts are a breeze to make at home, and much less expensive than buying them in a gourmet grocery store.
Just combine two tablespoons of butter with two tablespoons of brown sugar in a skillet on medium heat. Don't let the butter boil, but stir until the two are combined. Add a dash of nutmeg and a dash of cinnamon, or your favorite baking spices, and mix two cups of walnut halves or pieces into the pan. Stir until the nuts are coated in the mixture and it cooks down a little. If it seems like you don't have enough of the sugar-butter mixture to cover all the walnuts, just add another tablespoon of each and mix together as the butter is melting, then stir together with the nuts.
This homemade french bread is pretty much my favorite bread ever. I'll share a recipe for it soon.
Spread a layer of chevre on a slice of bread. I prefer to spread it rather thinly, but if you really like goat cheese, spread it as thick as you want.
Add dried cranberries and the candied walnuts and top with a drizzle of honey. I love the taste of raw honey, and it went with this perfectly, but you could use cooked (regular) honey if you want.
Yum! It even won me over.

ReplyDeleteIt's definitely a strong flavor, but there are different kinds of goat cheese like there are different kinds of cheddar. It's a fun new thing to try, though! :)
