Can you say delicious? This is my new favorite summertime treat. Even better, it was super easy and doesn't require an ice cream maker! This summer when we lived in Florence, Italy, we ate this or gelato (Italian ice cream) pretty much every day. Granita was so icy and refreshing, but I never tried watermelon- only strawberry, lime, lemon and coconut. (They're all good, and all easy to make. Granita is amazing.)

4 cups seedless watermelon, cut into chunks
1/2 cup sugar
juice of one medium lemon (or 2-3 tablespoons lemon juice)

1. Puree the sugar, watermelon and lemon juice in a blender until well mixed.
2. Pour the mixture into an 8x8" metal pan, cover with foil, and put in the freezer. Be careful to keep the pan level once it is in the freezer!

3. Freeze for one hour, then take the pan out of the freezer and scrape with a metal fork until you have "raked" the whole pan.
4. Repeat this one or two times (freeze for an hour, scrape with the fork) until the mixture is entirely frozen and has the texture, more or less, of shaved ice. Serve in individual cups; top with a chunk of fresh watermelon if you want. May be made up to two days in advance.
5. Enjoy!

Let me know what you think about granita if you try the recipe out!

  1. Looks great. A good way to use up left over watermelon! How would you make the coconut one, it sounds yummy!

  2. The coconut one is just coconut milk and simple syrup. Here's a recipe:

    I love granita!

Leave us some love! :)
